Noble Bread is a small scale bakery featuring old world techniques, a stone hearth, and naturally leavened bread. Our bread is created only using organic GMO free flours, water, sea salt, and organic levain starter, which is a culture of wild yeasts used to slowly levain bread. It takes an astonishing 36 hours to make one loaf of Noble Bread. Utilizing whole grains, and ancient grains makes the bread far more complex and biologically active than just plain white bread.

We are open Saturday mornings year-round, rain or shine, save any major parade days (like the Fiesta Bowl Parade). Our hours are 8 am – noon May through September and 9 am – 1 pm October through April.
We are also open Wednesday mornings October through June, 9 am – 1 pm.
We are located at the SE corner of Central Ave. and Bethany Home Rd. in North Central Phoenix. The market is on the north side of the property near the preschool playground. The market winds south along the grass toward the indoor cafe.

Gilbert Farmers Market (GFM) is located in Downtown Gilbert just West of the iconic Water Tower and is open every Saturday. With over 60 vendors during the summer season and reaching close to 100 vendors in the fall/spring, the GFM offers a wide variety of locally grown produce from near by farms as well as many local Arizona Food Producers.

This loaf features spent grains from Wren House Brewing Company. Spent Grains change depending on the type of beer brewed. These breads tend to be denser, flavor profiles can range from sweet, mild, sharp, malty, nutty and toasty.
