Noble Bread is a small scale bakery featuring old world techniques, a stone hearth, and naturally leavened bread. Our bread is created only using organic GMO free flours, water, sea salt, and organic levain starter, which is a culture of wild yeasts used to slowly levain bread. It takes an astonishing 36 hours to make one loaf of Noble Bread. Utilizing whole grains, and ancient grains makes the bread far more complex and biologically active than just plain white bread.

Uptown Farmers’ Market

We are open Saturday mornings year-round, rain or shine, save any major parade days (like the Fiesta Bowl Parade). Our hours are 8 am – noon May through September and 9 am – 1 pm October through April.

We are also open Wednesday mornings October through June, 9 am – 1 pm.
We are located at the SE corner of Central Ave. and Bethany Home Rd. in North Central Phoenix. The market is on the north side of the property near the preschool playground. The market winds south along the grass toward the indoor cafe.

Gilbert Farmers Market

Gilbert Farmers Market (GFM) is located in Downtown Gilbert just West of the iconic Water Tower and is open every Saturday. With over 60 vendors during the summer season and reaching close to 100 vendors in the fall/spring, the GFM offers a wide variety of locally grown produce from near by farms as well as many local Arizona Food Producers.

From Farm To Mill 

Quality is always on our minds. We are on a continued quest to extract new flavors, more nutrition and mining the possibilities of grains. We encourage farmers to grow boutique and heirloom varieties of wheat. Our expert miller, experiments with our grains to deliver unique flours to create each and every Noble Bread. How the whole grains are crushed can have a radical impact on the final bread flavor.

Our Process

Each bake we create three breads. Each bread is baked dark because we want to create a strong contrast between a crisp crust and a tender crumb and we do this to extract all the flavors of a caramelized crust. Our signature bread is our Country loaf, a blend of white and stone ground California whole wheat. Weekly we offer a grain and/or seed specific bread, incorporating GMO free seeds and some of the oldest grains on earth: emmer, Kamut, einkorn, and spelt. The third bread that we make is a fruit and nut bread. Varieties range from cherry walnut, to Turkish apricots and pecans. We are proud to support Arizona’s Pecan Farmers.
